Lemon-Scented Tondi: Mediterranean freshness that surprises

Lemon-Scented Tondi are the essence of Mediterranean lightness enclosed in a round shape. The filling combines fresh ricotta with grated cheese with vegetable rennet, creating a delicate base for the true star: grated Italian lemon zest (1.3% of the filling).
It’s not just a “hint” of lemon: here the scent is present, recognizable, and evocative. You can smell it when cutting the ravioli, perceive it at the first bite, and it stays with you until the last. The generous round shape (approx. 10 g per piece, 5 cm diameter) allows for elegant plating: 13-14 pieces are enough per portion.
The egg pasta cooks in 2 minutes, maintaining a perfect al dente texture.
The pasta-to-filling ratio of 43/57 favors the filling, allowing the citrusy aroma of the lemon zest to fully emerge.
